Substituting Of Protein In Shrimp And Fish Powder For Snail Powder In The Preparation Of “shito”
The African giant snails (Achatina achatina) locally known as "nwapa" is a common species in Ghana and a source of high protein content but low in fat. The aim of this research was to prepare snail powder and used it to substitute shrimp powder in "shito". Snail formulated "shito" was much more preferred over shrimp "shito", scoring 75, 50, 80, 50, and 70 percent for appearance, taste, texture, aroma and over all acceptability respectively. However, shrimp formulated "shito" had 40, 50, 75, 45, and 25 percent for appearance, taste, texture, aroma and over all acceptability respectively. The study also revealed that 41% of respondents could not consume snail meat as a results of price.
