Evaluation Of Antinutrients Level In Flour And Flour Products Consumed In Kaduna Metropolis, Kaduna- Nigeria
This study assessed the anti-nutrient (phytate, oxalate, lectin, cyanide and potassium bromate) contents of flour, biscuit and five bread samples consumed in Kaduna Metropolis. The anti-nutrient contents were analyzed using standard methods.
